The Best chicken jerky recipe

If you’re thinking about making chicken jerky at home, congratulations — you just found the best recipe on this side of the internet. It’s simple, delicious, and perfect for snacking or storing.

Step 1. Get 600g of chicken breasts filets (You can get more or less meat but stick on to proportions)


Step 2. Rinse the chicken under cold water and cut it into pieces.

It’s not just about making the slices thin — what really matters is keeping them the same thickness. This ensures they all dry evenly in the oven.


Step 3. Place all the chicken pieces into a container or pot.


Step 4. Spice it up!

Now add soy sauce, salt, pepper, and paprika — it’s chicken, after all! Pour in the soy sauce until it just covers the top layer of meat. Then, season to taste. I usually go with about 1 teaspoon of salt, ½ teaspoon of paprika, and ½ teaspoon of black pepper. Adjust the seasoning based on your own preference.

In my case it’s 120g of soya sauce


Step 5. Massage it!
Put on a glove and gently mix everything by hand. Make sure the spices are evenly spread throughout the container — every piece should get some love.


Step 6. Sweet dreams.
Make sure all the meat is fully covered in the sauce, then close the container or pot and place it in the fridge. Let it marinate for at least 10–12 hours — overnight is perfect.


Step 7. Take the meat out of the fridge. Remove the pieces from the container and place them in a sieve or colander. Let them sit for a couple of minutes to allow the excess marinade to drain off.


Step 8. Lay the meat out on a paper towel, then gently blot the top with another paper towel. This helps remove any remaining excess sauce.


Step 9. Evenly spread the meat slices across the dehydrator trays, making sure they don’t overlap.


Step 10. Set the dehydrator to 60°C and the timer for 7 hours.


Step 11. Wait for the jerky to dry (you can periodically check its readiness). If your slices are thinner than mine, they may take less time.


Step 12. Ready!
